Mushrooms, Ham and Eggs Fried Rice

  • 2 tbsps E.V. olive oil
  • 2 tbsps butter
  • 2 eggs
  • 1/2 tsp minced garlic
  • 1/4 cup diced ham
  • 8 mushrooms
  • 2 cups of steamed white rice
  • 1/4 tsp thyme
  • Salt and pepper to taste


  1. Beat the eggs with a bit salt.
  2. Heat 1 tbsps olive oil in a pan over medium heat and pour the eggs and scramble them and cut it into small pieces, remove it and set aside.
  3. Heat oil and butter in a pan over medium heat, add garlic, mushroom and stir-fry for 5 minutes. And then add ham, thyme and rice and a bit water and stir-fry for 3 minutes. Salt and pepper to taste.
  4. Put the eggs back into the pan and mix well. Stir-fry for one more minute.
