Shrimps and Tofu

Ingredients:

  • 1 block of egg tofu
  • 1/2 cup of broth
  • 2 tbsp peanut oil
  • 8 shrimps (peeled and deveined)
  • 2 tbsp chopped green onion

For marinade the shrimps:

  • 1 tsp cornstarch
  • 1 pinch of salt
  • 1 tbsp peanut oil

Others:

  • 1 egg
  • 1/2 cup of broth
  • 1 tsp cornstarch
  • 1 pinch of salt

Method:

  1. Marinade the shrimps with cornstarch, salt and oil for 20 minutes.
  2. Beat an egg in bowl and add 1/2 cup of broth, 1 tsp cornstarch, 1 pinch of salt and mix well, set aside.
  3. Heat oil in a pan over medium-high heat. Add the egg tofu and cook for 5 minutes, stir occasionally.
  4. Add 1/2 cup of broth and bring it to a boil and then add the shrimps and chopped green onion. Lower the heat and cook for 1 minute.
  5. Pour in the egg mixture and stirring for 30 seconds and off the heat. Don’t over cook it.
